BACK Iconic Hollywood Roosevelt Hotel Debuts Spectacular Second Act

In Hollywood, timing is everything. During Oscar week, the Hollywood Roosevelt Hotelrevealed its latest astute move to preserve and reinvent its mezzanine-encircled historic lobby, the scene of the first Academy Awards presentation.

Acclaimed L.A. design team Studio Collective, in the restoration and refining of the new Public Kitchen & Bar uncovered an original mural on the sweeping ceiling, while adding plush banquettes and an Old School yet comfortable décor, including an ivy-and-fauna-swaddled, sun-dappled private garden room.

Thompson Hotels co-owner Jason Pomeranc says, “This is what the restaurant in the Hollywood Roosevelt always should have been. It’s going back in time to the hotel’s creation in the 1920s, but remaining classic, current and fresh with an amazing menu and beautiful décor.”

To helm Public’s kitchen and concoct the new menu, Thompson Hotels turned to Domaine Restaurant’s president and executive chef Tim Goodell, who also oversees the landmark hotel’s lauded 25 Degrees. “Public is a very personal reflection of my own kitchen and the food that I often cook for my own friends and family,” says Goodell. “It’s a distinct but accessible American menu, one that a guest could enjoy a different meal from ever night.”

With most entrees priced at under $30, the dinner selection includes chicken liver terrine, chicharrones with chili peppers and lime, crispy oxtail galette with poached farm egg and frisee; spiced duck steak leg confit and Duroc port schnitzel, among other delectables.

Nightly the restaurant-with its hotel lobby bar now open to the public-will also offer chalkboard specials such as trotter and black truffle sausage and lamb Bolognese with Bellwether Farms ricotta, and other local and esteemed butcher- and green-market fare. The lobby bar (with many crafted cocktails priced at a reasonable $9) will also have its own appetizer menu, including a cured meats and cheese selection, fresh oysters and shared plates.

In the spring, Public Kitchen & Bar will debut a lunch and weekend brunch menu.
