Alux Restaurant has cornered the Playa del Carmen market in awesome venues. The dining rooms are situated inside a 10,000-year-old cave. The restaurant name derives from the Aluxes, mystical goblins from Mayan lore. Agile, light, and mysterious, the legendary beings escaped human notice. The restaurant adopts this playfulness and romanticism. Dine amid the rocks and drink a bottle from La Cava, the restaurant’s domed room filled with wine. To get to know the people that keep this magical place running, we asked the staff a few questions.

How would you describe the culinary scene in Playa del Carmen? 

It’s in continuous movement. In Playa del Carmen, we have a huge range of proposals and competence. We have the fortune to live in a heavenly place that attracts appetites of the entire world. This is why more people come to live the experience, whether in a resort or venturing out to visit some restaurants by recommendation.

Local ingredients and cooking habits are an advantage here. Ingredients have special textures, colors, aromas, and flavors. National and international chefs come to the Riviera Maya with their own ideas, enriching the fusion of cultures, blending customs of the region with techniques and products from elsewhere. Describe some of the most exciting events you’ve had at Alux. 

We were part of a Scientology dinner, and fundraised an estimated 50 million. You’ll see hundreds of people parading through the cave during a marathon of 8 to 10 hours in one of the most internationally recognized festivals. (Eduardo Landell – Event Manager)

How did you get into the restaurant business, and what advice do you have for people looking to enter it? 

We got into the restaurant business because of the discovery of this beautiful cavern, with interconnected underground vaults, with an area of 2,000 square meters.

I think the best advice I can give anyone is to have a lot of patience, perseverance and passion for your business. A restaurant is 24/7 for 365 days work. My biggest reward is our guests’ satisfaction. (Rolando Calderón – General Manager & Owner)

When you’re not at Alux, what are some of your favorite spots in Playa del Carmen to visit? 

I have few favorite spots like La Trattoria for its Italian specialties; Chez Céline for their great bread, desserts and coffee; and, of course, the beach where I can admire the Caribbean Sea. (Rolando Calderón – General Manager & Owner)
