On their website, the Lower East Side restaurant, Wassail, laments how Americans have co-opted the word “cider” to mean a banal lunchbox beverage, sipped from a plastic straw poking through a cardboard box. It’s a centuries-old alcoholic drink with distinct notes and a storied history. Wassail notes how regions in Northern Spain, England, and France have long celebrated apples’ fermented juice, spreading the beverage worldwide.
