In the back-to-school spirit, Scout PNW at Thompson Seattle is hosting a series of small, interactive classes with their talented culinary team at the Chef’s Counter. Enjoy a rotating lineup of oyster shucking, butchery, craft bartending and cake decorating and become a master in the art of your choice. We sat down with the team to learn a little more about each course.

Oyster Shucking – The Shucking Team from Josh Henderson’s Westward will do a hands on oyster shucking demonstration with each student getting a ½ dozen oysters with beverage pairing. Students will be provided their own oyster knife as a take away.

Cake Decor – Executive Pastry Chef Kate Sigel will give each student their own personal cake on which she will do hands on demonstrations using different icing techniques. Students will be provided their own off set spatula and a pair of decorating tips to use to decorate and then take home.

Seafood Butchery – Chef De Cuisine Roger Harper will demonstrate how to butcher various small fish that he picks fresh from the market prior to class. Students will taste from the prepared fish with beverage pairing and also receive a pair of fish pliers as a take away.

Craft Cocktails – The Thompson Seattle bar team will discuss basic cocktail theory and why the classics – like Old Fashioneds, Sidecars, and Daiquiris – are always on the menu. Techniques and seasonality in the home bar will be discussed and sample cocktails will be provided with light faire from the culinary team. Students will be provided with a mini cobbler shaker.
