Fun with Flamingos
Before millennials began monopolizing the color pink, flamingos were seriously promoting the hue. The gorgeous birds consume algae loaded with beta carotene, a pigment also harbored by the mollusks and crustaceans they snack on. These meals, and the way flamingos digest them, give the animals their color. (The process suggests that you are, indeed, what you eat.)
Visit the fishing village of Río Lagartos, which boasts the densest concentration of flamingos in Mexico. Head out for an early-morning nature tour. Afterwards, eat a seafood lunch at Ría Maya (splurge on the lobster!) Excellent selections abound at Restaurant y Posada Macumba too.
