Charcoal as a Creed
Carbón Cabrón is one of the most notable new spaces in Cabo, not least because of its open-air kitchen and blazing fires. The latest venture from one of Mexico’s most famous chefs, Poncho Cadena, presentation here is key, from the dark walls to gorgeous plating. Specializing in wood-fired meats, the restaurant serves some of the most attractive cocktails in the region. An equal level of care and attention are brought to the vegetables, all of which are grown locally.
Charcoal is practically an ingredient here—certainly, it’s integral to the flavors on offer. While the steak is a must-have, don’t skip the bone marrow or the octopus, both of which are cooked to perfection, like everything else, over hot coals.
